Matcha Coconut Cookie Recipe
Enjoy the sweet combination of matcha and coconut flavors in this cookie.

Ingredients:
- 1/2 cup unsalted butter, softened
- 3/4 cup sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon matcha powder
- 1 cup shredded coconut, fresh or dried
Instructions:
- Beat butter and sugar at high speed in a large bowl until the mixture is smooth and pale.
- Add egg and vanilla extract, and beat until well combined.
- In a separate small bowl, mix together flour, baking powder, salt, and matcha powder. Gradually add this mixture to the butter mixture, stirring well.
- Finally, add shredded coconut and mix until evenly distributed.
- Use a spoon to scoop out portions of the mixture and place them on a baking sheet lined with parchment paper or silicone mat.
- Bake in a preheated oven at 350°F (175°C) for about 10-12 minutes or until the cookies are golden and cooked through.
- After baking, let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
